Which Salt To Use?

There are so many different salts for cooking, so how do you know which one to use?

The most basic is table salt, which is fine for everyday cooking and baking because it dissolves almost instantly.

Next is sea salt, my personal favorite, which is a beautiful, clean salt made from ocean water that’s great for all kinds of cooking and finishing.

The most all-purpose salt is kosher salt, which is used for seasoning meat, vegetables, and pasta water, and it’s also what’s found in most professional kitchens.

There are all kinds of others, but my favorites are kosher salt and sea salt.
