Don’t throw away your leftover rice.
Make fried rice instead.
Start in a wok with some high smoke point oil, and once it’s hot, add shallots, green onions, garlic, and ginger, and stir until aromatic.
Move this mixture off to the side in the wok. Then crack in a few eggs, and once those are scrambled and fluffy, add in your day-old rice, breaking up any clumps, and season with MSG and white pepper.
Pour in your soy sauce against the hottest side of your pan so it bubbles and caramelizes like this.
Then finish with more green onions and some toasted sesame oil.
I like to plate by packing it down into a bowl and flipping it upside down.
So easy and so delicious.
