Don’t throw away your parmesan cheese rinds.
Instead, first get out as much of the cheese as you can.
Then give the rind a little scrape to get off any excess wax.
You now have several great options.
The first is to add it to any kind of stock for a flavorful broth.
The second, my favorite, is to cut into small pieces and place them in the microwave.
After about ninety seconds, you’ll be left with nice crunchy parmesan crusts.
