Here’s how to make the crispiest onion rings.
Slice two large yellow onions into half-inch rings, then separate them out.
I couldn’t resist and tried to make a quick onion volcano which didn’t work at all, and soak them in ice-cold water for 10 minutes.
Now, in one bowl, whisk together one and a quarter cups cold seltzer water and one egg white.
And in another, combine one cup all-purpose flour, a half cup cornstarch, one teaspoon baking powder, a pinch of garlic salt, black pepper, and paprika.
And once you’ve mixed that up, combine them both and your batter should look something like this.
To fry, heat some oil to 375 Fahrenheit and then dredge the onion rings in plain flour, then your batter, then straight into the oil and fry these until golden brown and crispy, then toss straight into a bowl with some salt and enjoy.
