Here’s how to make the easiest, fluffiest pancakes.
Into a bowl, combine 2 cups all-purpose flour, 3 Tbsp sugar, 4 Tbsp baking powder, 1/2 tsp baking soda, and a pinch of salt.
Then, whisk and add two large eggs, 1/4 cup neutral oil, 1 and 1/2 cups milk, and a splash of vanilla extract.
Stir until just barely combined. It’s okay to have a few clumps.
And while that rests for 10 minutes, melt some butter in a pan over medium low and wipe most of it away before adding in your test batter. Use this time to dial in your temperature. We all know the first one is never that good.
Now, we can cook our first real pancake.
