How To Make Homemade Pasta

This is the easiest way to make fresh pasta.

Start with two cups of flour and use a bowl to make a nice well in the middle.

Then add two whole eggs and four additional yolks.

Whisk until the eggs are fully scrambled.

Then begin to pull in the flour from the edges until everything thickens up.

At this point you can bring in a bench scraper to help.

Once it’s mixed even further, use your hands to bring everything into a dough.

Kneed for about ten minutes adding a little water if the dough feels dry until smooth.

Cover with plastic wrap and let it rest at least 30 minutes at room temperature.

Once rested, cut it into portions.

Working with one piece at a time, roll it carefully through your pasta maker.

Cut it into whatever shape you want.

Cook it by salting your water like the ocean and boiling until it floats.

Mix your pasta with your favorite sauce and a bit of pasta water.
