Here’s how to fillet a whole salmon.
Start by cutting around the head, then turn your knife flat and cut all the way down the spine to get your first fillet.
Now flip the fish over, and same thing again: follow along the spine with your knife until you’ve fully separated the second fillet.
Once you’ve got both beautiful fillets of fish, use your knife to find the pin bones and carefully remove them one by one.
Then flip, and if you love eating the crispy skin like I do, use the back of your knife to scrape off all the scales.
Cut your salmon into whatever size portions you want, then cook and enjoy!
