Here’s how to make the best pan sauce for your steak!
Start by cooking your steak how you normally would, seasoning on all sides and then adding a splash of oil into a pan over high heat for a beautiful golden brown sear.
Maybe make it a little fancy and toss some butter and fresh herbs in there, too.
Once your steak is done, set it aside to rest, leaving just a few tablespoons of fat and more importantly, all those little crispy golden brown bits left in your pan.
Then add in 1 tablespoon butter as well as some minced shallot and garlic and cook for about a minute, after which you’ll add a half cup of beef broth.
Scrape all the small crispy bits away from the bottom of the pan and once slightly reduced, whisk in 2 tablespoons cold butter and 1 tablespoon Dijon mustard.
Then strain if you want and pour it over your steak.
If you’re a real pro, you’ll also add all those juices from the bottom of your resting tray.
