Here’s how to make the easiest tomato soup.
First, fill two-thirds of a baking sheet with tomatoes, one quartered yellow onion, a few slices of bell pepper, and a couple halved heads of garlic.
Cover everything with your favorite olive oil.
Then add a generous sprinkle of salt.
And toss it in the oven to bake at 400 degrees Fahrenheit for about 35 to 40 minutes or until the veggies look blistered and golden brown.
Squeeze out the garlic onto the tray and remove the peels.
Scrape the bottom of your pan to pick up every bit of flavor.
Then add everything, including the juices, to a pot.
Add in some fresh basil for extra flavor and blend until smooth.
Finish by adding an optional splash of heavy cream and season to taste.
